Wild game blind taste test

In the 11-minute video below, you’ll see the team from the Fresh Tracks YouTube channel conduct a blind taste test of wild game, specifically moose, elk, mule deer, whitetail and pronghorn (antelope).

The test uses backstraps from each species, and the meat is only lightly seasoned with salt before grilling.

Do you think you could identify each species?

I have one suggestion for making it a better test. I wouldn’t place five dishes of meat in front of the taste-testers and tell them each plate contains the meat from one of the five possible big game species. Doing so enables the testers to narrow down their guesses (i.e. process of elimination). As you’ll see, a couple people get three out of five correct, which is the next best score to perfect. In other words, with this format, it’s impossible to get four out of five.

I suggest doing a wild game blind taste test with these five species, but have 10 plates. And tell the taste-testers that every species is used at least once, but one species might be used twice, three times, or maybe more. Such a format would really identify who is the best at identifying wild game backstraps!
