In the 3.5-minute Facebook video below, multi-species guide Eric Haataja explains his process for filleting a walleye with an electric fillet knife. Eric is using a Rapala Lithium Ion Cordless model.

The same steps could be used with a non-electric fillet knife, but it’s much easier to cut through the rib bones with an electric knife (the long cut along the backbone that Eric starts at the 22-second mark of the video). As he notes, the key is removing as much meat as possible; it’s not a race.
