Designer Alan Folts of Melborne, Florida, created the custom knife that was to become the Biwa after weathering pressure from his minimalist friends to create a do-it-all hunting/fishing knife that weighs as little as possible — named after a species of Japanese trout. The Biwa’s high-carbon stainless-steel blade is easy to sharpen and takes an edge well. A full tang provides strength, and a colored G10 handle adds visual appeal.
