Believe it or not, many walleye anglers throw away what might be the best cut of meat — the walleye wing.

RainyDaze Guide service owner Captain Chris Granrud (above left), owner of RainyDaze Guide Service, is a well-known multi-species guide on massive Rainy Lake, which sits on the border of Minnesota and Ontario. Many of his clients want to target walleyes, which is understandable because the species has a well-deserved reputation for tremendous table fare.

As you’ll see in the Facebook video below, Granrud explains that in addition to fine fillets, a walleye provides a wonderful wing, too. What’s a walleye wing? You’ll have to watch the 1.5-minute video to find out. (Click to enter fullscreen and turn up the volume for best viewing.)

Note: Granrud recommends splitting a wing before cooking. That way, you can eat each half, similar to shrimp. But you can also leave a wing whole, as shown in the above right photo. Regardless, don’t throw away a walleye wing!
